A summer staple so quick and easy to prepare. Mint does bring even more fresh hint to this soup, tastier served chilled. Great to sip with a drink in shot glasses before dinner or as first course.
This is my own interpretation of the delicious Mexican guacamole, with a French twist. Avocadoes are mixed with tomatoes, schalots or spring onions, lime, fresh cilantro and for the spice: the French piment d’Espelette / Espelette chilli pepper. But you can make this recipe with chili or Cayenne pepper.
This tart is an impressive treat for simple moments or great occasions. A complex appearance and very nice presentation but actually it’s very easy to make. The kids just love tarte soleil. Adults too. It’s one of those gorgeous dishes that make a “wow” impression!
May it be peach, nectarine or donut peach, white or yellow, this recipe is very light and refreshing. Great for summer hot days!
Great for savory tarts or quiches, very tasty and healthy as this crust is gluten-free and with no fat. Here is how to make an incredible quinoa crust with only two ingredients, quinoa and egg (may be replaced for vegan version) and super easy to do.
This recipe is both light and very tasty. Pears are roasted with spices (you can feel saffron, star anise and cinnamon at the same time in one bite!) and cream cheese is whipped with vanilla (but not too much as we want to keep cream cheese flavors).
Puff pastry covered with tomato sauce and red, yellow and green bell peppers. Vegetables are roasted with onion and garlic in olive oil and herbes de Provence. All the flavors of South France Provence in an easy and tasty tart.
Cheese balls, coated with dried fruits and walnuts, nicely wrapped in zucchini. Wouldn’t those bites be tempting as a tapas to grab with a drink before dinner?
A very fresh red fruit tart with a little twist. A crunchy shortcrust pastry, an ultra-light and aerated lime whipped cream, and delicious fresh raspberries. This tart is very elegant and delicious.
An interesting spongy texture, for an easy cake with grated coconut and coffee. Flavors are mixed but one don’t overcome the other. This changes from classic cakes and may surprise with few efforts.
Super quick and easy. And natural with no food colourings and no preservatives. Few ingredients, just water, fresh mint and sugar. The result is a very refreshing drink with a nice bright mint flavor or aroma without being too sweet.
How about changing from the classic basil pesto? With watercress leaves, olive oil and a bit of parmesan cheese (no nuts). Great with fish, barbecue or pasta… Absolutely bursting with fresh herby and peppery flavor.
A nice way to change from the classic salad dressing. Puréed strawberries are mixed with olive oil, a dash of lemon juice and a dollop of agave syrup (or honey). It does dive a twist to your mixed salads.
South France Provence cuisine use chickpeas in many preparations. And olive oil almost everywhere. As hummus is a typical Mediterranean preparation, the French version of hummus have only olive oil, thus without tahini.
A confort soup, with zucchini instead of potatoes thus starch free, very tasty with the characteristic flavors of watercress and turmeric. A very tasty and healthy dish.
