Although butchers and even supermarkets offer ready-made skewers, I like to imagine mine. It’s often quick to prepare. Olive oil, lemon juice, sometime soy sauce. Plus garlic and herbs from the garden. Then I try all kind of combination of spices.
So today I propose a simple marinade, with few ingredients to enjoy the flavors of paprika. The amount of marinade may seem small, but here we try to give flavor to the chicken by spicing and not soaking in a bath of marinade with often too much oil.
This recipe may also be cooked in the kitchen in a frying pan with small chicken or turkey fillets instead of cubes.

Start by preparing the marinade:
- In a container pour juice of ½ lemon, add olive oil and paprika. Stir well. Slice onion or shallot and add it with herbes de Provence (or any dried herb you like). Season with salt and pepper. Stir again
- Cut the chicken into large cubes, add them to the marinade, combine to coat meat on each side.
- Set aside for about 2 hours. Combine from time to time so that the marinade impregnates all sides of the chicken pieces.
Thread the marinated chicken onto metal skewers.

- Cook on the barbecue or under the grill for about 5 to 10 minutes on each side (depending of thickness of chicken cubes and heat), turning frequently, until the chicken is thoroughly cooked and golden-brown
