Ideal for an appetizer (apéritif or apéro in French) these bread toasts (or bruschettas, or even crostini) are very flavorful with cherry tomatoes previously roasted in the oven with olive oil and fresh goat cheese (which can be replaced by another fresh cheese or cream cheese).
A few information on the recipe
- Tomatoes: I use the same principle here for cherry tomatoes as for my chive and cherry tomato custard flan recipe which is very popular on the blog. The idea is simple: olive oil and aromatic herbs to coat tomatoes, then in the oven. Tomatoes become almost candied and very concentrated in flavors. I also serve those tomatoes as a side with meat or fish.
- This cooking method can be used for many other vegetables such as fennel.
- Cheese: The French absolutely love fresh goat cheese and it is true that it is perfect for those tartines. You can replace by other soft cheeses according to your taste or what you can find in your country. Cream cheese such as the French Saint Morêt or Philadelphia. Or even Greek yoghurt seasoned.
- Bread: Here country-style bread from the Famous French bakery Poilâne. You can also have slices of Fresh baguette, sourdough bread…
You can prepare all ingredients in advance and assemble just before your guests arrive.
Roast Cherry Tomatoes and Goat Cheese Tartines
Flavorful tartines with fresh goat cheese or cream cheese topped with oven roast cherry tomatoes. All the flavors of south-France Provence on those toasts (crostinis / bruschettas) Roast cherry tomatoes in the oven. Once cooled, spread goat cheese on sbread top candied tomatoes.
Ingredients
- 6 large slices bread country-style
- 800 gr cherry tomatoes
- 200 gr goat cheese fresh
- 2 clove cloves
- salt
- pepper reshly ground
- herbs of Provence
- olive oil
Instructions
Roast cherry tomatoes
- Preheat your oven to 160 °C/320°F.
- In a baking dish, arrange the cherry tomatoes. Season with salt, pepper and sprinkle with the aromatic herbs of your choice (herbes de Provence, thyme or fresh rosemary …). Cut garlic cloves into thin strips and add them to the cherry tomatoes. Pour 2 to 3 tablespoons of olive oil and combine to coat tomatoes with oil and aromatics.
- Roast in the oven, combine from time to time for about half an hour. If they give a lot of cooking water, remove this juice (don’t throw it away!). Once cooked (when tomatoes become tender with wrinkled skin) remove them from the pan and allow them to cool down.
Prepare toasts
- Cut slices of bread. Possibly grill them.
- Spread with fresh goat cheese.
- Place candied cherry tomatoes on top. Possibly add some strips of garlic.
