Chocolate and Vanilla Marble Cake (French gâteau marbré)

Gâteau marbré is a great classic of French home cooking. Both simple and decadent, the ideal cake to give to kids for afternoon snack. First combine all ingredients except chocolate as for a classic cake. Then add melted chocolate in 1/3rd of the dough and vanilla in the 2/3rd part. Finally fill the greased and floured mold alternating vanilla batter and chocolate batter.
In a bowl (or using your food processor), whisk the 5 eggs with sugar, until the preparation whitens and gets a smooth texture.
Melt butter and add it to the egg-sugar mixture, stir immediately.
Apart, combine the dry powders (flour, baking powder and salt). Add this to the previous preparation and gently combine.
Make the two flavors and assemble
Melt dark chocolate in the microwave or ideally in a bain-marie.
Separate the dough in 2/3rd and 1/3rd. Mix the chocolate with the smallest portion (thus of
1/3rd) and add vanilla in the biggest portion (thus of 2/3rd).
Grease with butter or oil and flour a mold (here round mold of about twenty centimeters of diameter). Then add successively a little bit of vanilla preparation then a bit of the chocolate preparation. Tap the mold between each new filling so that the dough will spread a bit on the whole surface of the mold. Continue again and again alternatively with chocolate and vanilla dough.
Bake
Bake for 45 to 50 minutes, check if the cake is well cooked with the tip of a knife. When baked, flip it over a dish.
If you choose to add the optional hazelnut topping
In a pan, heat sugar with butter, add hazelnuts let caramelize over medium heat, stirring regularly for about ten minutes.
Neatly arrange those caramelized hazelnuts on the cake and sprinkle with icing sugar.
